Bakers (Kashmir, 1850-1860), oriental and India Office Collections, British Library.
found this rare image of Kashmiri Kandur waan in an awesome book called ‘Curry: A Tale of Cooks and Conquerors’ by Lizzie Collingham.
Pandit Bakery Shop at Noida (U.P). 2009.
Interesting pictures. The text in the British Library illustration seems to be Persian, not Urdu or Kashmiri. The only words I can make out are nanvai, tarazoo, tanoor (yes, not tandoor).
Thanks for the translation. Persian was the official language of Kashmir, so its use in the picture makes sense. Also, 'Kandur waan' in Kashmir is still often called as 'nanwai'. Will try to get someone to translate some more words.
