Took these photographs one early Sunday morning.
As I walked towards the delivery counter of the bakery, nearby, their previous customer – a balding, portly well-past middle age gent wearing checkered Bermudas (or what resembled Bermudas), a T-shirt horizontal striped in two hues of blue and sporting a pair of rubber chappal, who (I noticed) had bought a bagful of girdas and lavasas, kick started to life his turquoise painted, JK three-digit number plated, late 1980s model Bajaj Chetak scooter and left; bag of girdas and lavasas packed safe in the front dicky.
Next in line was a domestic help of some family, a ‘jeer bai‘, placing an order for rotis.While her order was getting ready, the shop help discussed weather and this and that with her. After she left, I had the entire shop to myself, so I took some photographs while my order for girdas and lavasas was getting ready.

They are planning to open a branch at Greater Noida.
I wonder if there is a kashmiri Pundit bakery still functioning in kashmir???
I tried my hand here at making the kulchas and tel vor with disastrous results.
I wonder if someone has the recipe for making these at home.

Kashmiri Pundit bakery in Kashmir. Tough chance.
Some months ago I did catch Kashmiri Muslim Naan Wai on a travel show called ' Highway On My Plate' aired on NDTV Good Times. The two host of the show loved the Kashmiri breads available at Khayyam Chowk.
Making kulchas and tel vor at home, again tough chance. Maybe possible is someone shares the recipe and the procedure. But I know Katlam would be really difficult to make. I have noticed how kandur keeps folding and pounding the dough. It's a tough and time consuming job!

Rats! Just what was needed to make a Kashmiri Bakery complete.
The KASHMIRI BAKERY talked about in this blog is in SERIOUS TROUBLE. There were two brothers working at this bakery one of whom died(i dont know how). It brought all the resposnibility of his family(plus his own family)on the second brother who was running this bakery alone, untill a few days back. I went to his shop today and to my horror his ENTIRE SHOP WAS BURNT because of an electricity accident. According to him the accident caused damages worth A FEW LAKHS, which is a lifetimes earning by this man's standards. Poor guy was still working on the choolah which was the only thing that seemingly survived. The guy was so depressed that wasnt even accounting properly and was making mistakes which were lowering his profit(ie askin for lesser money than he was due), until an elderly gentleman told him. Im saying all this just to let our people know that this is the only kashmiri bakery in the entire noida/greatre noida area and has been around with us for atleats past 10 years(maybe more). And every kashmiri in this area have had his girdas, lavassas, telwurs etc at some point in time.WE SHOULD SPREAD THIS AND HELP HIM AS MUCH AS WE CAN VIA MONETARY DONATIONS.
